So these are just some of my salads that will certainly be featuring at my Christmas lunch. Roasted pumpkin, Fetta and Roasted Chickpea salad & Prawn, Mango & Macadamia salad. With humid & hot Brisbane weather….it is cold buffet for us. And best of all, house is cool, salads are prepped in fridge waiting & happy days….bring on the prawns.
Festive Green Salad
1 Green Oak Lettuce or 2 baby cos lettuce
½ salad onion, sliced
1 small lebanese cucumber, sliced
1 mango, sliced into segments or cubes
Zest of one lime
1 avocado, sliced
¼ cup chopped macadamias
½ packet snow pea sprouts
12 King Prawns, shelled and deveined
Dressing:
½ clove garlic, crushed
2 tbsp macadamia nut oil or olive oil
1 tbsp white wine vinegar
1 tbsp lemon or lime juice
freshly ground pepper, to taste
- Rinse and arrange lettuce leaves on a salad platter or wide salad bowl.
- Zest a lime and sprinkle on top of the mango slices.
- Arrange salad onion, lebanese cucumber, orange, avocado, chopped macadamias and snow pea sprouts.
- Combine crushed garlic, macadamia nut oil, white wine vinegar, 1 tbsp lemon juice and freshly ground pepper.
